Salmon


I love salmon, in fact if I had only one way to eat salmon it would be smoked. But this is my favorite rub for fresh salmon which is pan fried. This was a perfect dish for a weekend get together with friends that I wanted to be a little more formal.

1 teaspoon garlic powder
1 Tablespoon died basil
1/2 teaspoon salt
4 6 ounces Salmon filets
2 Tablespoons butter
4 lemon wedges for garnish

Preheat skillet to medium high heat. Stir together the garlic powder, basil and salt in a small bowl. Rub in equal amounts onto the salmon fillets. Melt the butter in a skillet and place fillets in skillet meat side done. Cook until browned and flaky--about 5 minutes, turn to place fillet skin-side down. Cook another 5 minutes, remove any skin from fillets and discard. Garnish with lemon wedge.

MY TIP: I sprinkle a tiny bit of garlic salt on the top side (which is the skin side removed). Let rest, the taste is best once it has cooled a bit and is not piping hot.
